They do that in South America where tribes spit into a communal pot. I think they were chewing cassava or maize or something like that. There are enzymes (like amylase) in saliva that break down the starches into fermentable sugars.

I think you’re referring to chicha. I have tried it, but didn’t like it. It made me think of buttermilk with alcohol.
