thing is, “sh” makes a different sound from “s”, so something like “serek” would work but not “shrek” I think
It’s important to keep in mind that the difficulty of learning a language is based on the languages you already speak. Finnish is a good example of this, as while Finnish children are able to learn it quickly due to its regularity, English speakers may struggle with how different it is (especially with some almost entirely unfamiliar concepts, such as the partitive case, which has no direct English equivalent)

Interslavic is neat, It’s a single language able to be understood by most Slavic speakers, and it works fairly well
Scots is its own language with its own writing system, people have been writing in Scots for centuries before the internet and it’s not just colloquial. Scottish English is seperate, being an actual dialect, but there is an English-Scots dialect continuum so finding the exact difference is hard
Fun fact: in old English, /j/ (the sound in Yes) was written using a g (often written as ġ in modern old English transcriptions)
