If I remember correctly, most of the modern aging processes try to mimic natural caves, since we just don’t have enough of the real thing to age all of our cheese.
You shouldn’t ask questions that cast subtle shame like that. The poor trees are just doing their best to survive out there, and you’re trying to get them to compare themselves to the great elder trees like redwoods?
