They didn’t start out that way. They used to just be machines that ate source material and made more. Then the Asgard trapped them on a planet where time moved much slower (or faster; it’s all too wibbly-wobbly for my brain to understand), and they evolved into the nano machines.
Wasn’t this a time is a flat circle thing? IIRC, the origins if the Replicators were in the Pegasus galaxy, as nanobots, who warred with the Ancients. I don’t remember exactly how it happened, but eventually their is a girl Replicator, I think the Ancients were running experiments to make less aggressive Replicators they could negotiate a peace with? Well the little girl Replicator wanted something to play with, so she made some “toys.” These toys wound up in the Milky Way, and reverted to their Von Neumann tendencies, and spread all over as a mindless hoarde. Then the Asgardians trapped them on a planet, and yes, eventually they “re-evolved,” back into a form more like their original.
Those two replicators are not related. The pegasus ones were made by the ancients as a weapon of war against the wraith (long haired hand vampires in leather coats), they continued to evolve until they emulated their makers and asked them to turn off the war and aggression directive. The ancients refused and then eventually nuked their planet when they didn’t function as intended, but survived while their makers lost their war. They then copied their civilization on their planet. Eventually they get completely eradicated in the form of having their planet shattered.
The original replicators (blocky, bug shaped) were toys created by an android girl sg1 found on a devastated planet, presumably made so by her creations before she was put to sleep and her toys went on a rampage across the galaxy. These replicators are at war with the asgard and at one point were lured to a single place and then put in a temporal slow zone. However they turned the effect around and accelerated their time, allowing them to develop into human forms as well in a short real time period.
These are then eventually entirely destroyed all over the galaxy by a device the ancients used to seed life in the galaxy.
Gray Goo.
NanoMachines replicating out of control, consuming everything like a swarm of locusts.

The idea is also originally from Engines of Creation by K. Eric Drexler, IIRC.

It’s been so long, I do not remember all the details. I do remember the girl and the toys thing. Vaguely.
thanks, very on brand for Stargate
