It’s not all pasta. The small bead types or star shapes aren’t generally called noodles. But otherwise what’s wrong with calling an egg and flour mixture in a string or ribbon shape a noodle? It’s a generic ingredient/shape descriptor. Is it only Asian cuisines for you?

There’s no reason for it to include eggs
Unless you’re making egg noodles, those do require eggs.
